We're talking about top of the line musicians, equipment and processes but even at that level I don't think it takes more than one day to mix a song, unless they keep revisiting each tune time after time. Of course it's time consuming, they surely recorded countless bits and pieces that will be tested before the final cut and it requires patience and fresh ears, but they must be very close to completion - if not done by now.
